Celery, Fennel & Quinoa Salad with Fried Chickpeas, Almonds, and Feta

This dish started as a crunchy side-salad with strips of fennel and celery. Then we added red quinoa, feta and chickpeas, and voila! Dinner was served. We crisped chickpeas in oil and dusted them with cumin. We wanted to use all of the fennel this time, including fronds—the feathery top—for a hint of green and anise. Cook, relax and enjoy!

Sweet potatoes, roasted until soft enough to spoon, are the perfect base for dark red pomegranate seeds, crisped up chickpeas dusted with plenty of spices, and feathery dill. It’s no coincidence that the colors of this meal–orange, red and green–will remind you of the leaves turning outside your window. Cook, relax and enjoy!

Crispy Chickpeas & Tomatoes with Garlicky Grits

In this comforting dish, spiced chickpeas roast in the oven until warmed and just a little crispy, while shallots soften and caramelize, and grape tomatoes burst alongside. This savory-sweet topping gets spooned onto creamy grits spiked with a little grated garlic. Don’t skimp on the olive oil at the end—it really enhances the flavors of an already top-notch vegetarian meal. Cook, relax, and enjoy!

Whole Wheat Parmesan Pasta with Chickpeas and Kale

Whole Wheat Parmesan Pasta with Chickpeas and Kale

To get the most flavor out of the tomato in this pasta dish, we toss chopped tomato with crushed red pepper flakes, salt, and olive and then let it stand at room temperature. While you sauté the chickpeas and kale and the pasta boils, the tomato chunks release their juices and the flavor deepens. Once the kale is tender and the chickpeas are warm, add the marinated tomatoes and the accumulated juices along with the pasta. Cook, relax, and enjoy!

Chili-Spiced Chickpeas with Roasted Sweet Potatoes

When it comes to creating a recipe it’s important to find the right balance of flavors. We paired the sweetness of sweet potatoes, with the earthy spiciness of chickpeas and brought it together with a creamy and floral lime zest crema—creating a perfect symphony that will please any palate. Cook, relax, and enjoy!
