1. Cauliflower tacos with pickled radishes

If you didn't know it already, the secret to a lot of vegetarian cooking is cauliflower. Season and roast it and you’re on your way to a delicious meat replacement. For this veggie taco recipe, we make the cauliflower central by roasting it and serving it up with pickled radishes and crumbled queso fresco. Don’t forget to add avocado and lime!

2. Crispy Cauliflower Pasta with Pine Nuts and Parmesan

Cauliflower transforms when finely chopped and cooked in a generous amount of olive oil: that’s the key to getting it deeply golden and crispy—and NO TOUCHING!—so don’t skimp and let it get nice and golden before you toss and repeat. The whole process takes less than 15 minutes, just enough time to boil the pasta and grate the cheese. Cook, relax and enjoy!

3. Indian Spiced Cauliflower with Cumin Rice Pilaf

We use chickpeas along with the cauliflower for an awesome contrast in texture.

4. Cauliflower "Fried Rice" with Tofu & Shiitake Mushrooms

In a blindfolded taste test, we dare you to identify the secret behind this clever tofu and mushroom fried rice. Cauliflower, chopped finely into rice-like pieces, is the ultimate chameleon. It gets outstanding flavor from a blend of tamari, sesame oil, garlic, and ginger. And given this is alternative fried rice, feel free to use alternative chopsticks (otherwise known as a fork!). 7. Cauliflower & Beet Grain Bowl with Harissa Yogurt

Baby it’s cold outside, and boy do we have the perfect cure! Cauliflower and golden beets roast together to sweet perfection and get a last minute addition of Swiss chard. The vegetables get served on a bed of grains that cook up in just 10 minutes. We pulled it all together with a tangy harissa yogurt and a garnish of fragrant mint. It doesn’t get any heartier than that. Cook, relax, and enjoy!

8. Cauliflower “Steak” with Almond-Olive Relish and Beans

Vegetables are really taking center stage these days, and we wanted to amplify their spotlight so we sliced a whole head of cauliflower into thick “steaks." Roasted until tender and served over garlicky mashed beans, we don’t miss the meat. Our favorite part is the sweet-salty-crunchy relish spooned over the top.
