What you’ll need:
4 oz red onion
2 oz pitted kalamata olives
8 oz feta
1 ciabatta roll
12 oz cherry tomatoes
fresh oregano
olive oil
freshly ground black pepper

Slice onion
Preheat oven to 400°F. Halve, peel, and thinly slice onion. Place in a shallow baking dish. -
Prep olives
Roughly chop olives and add to baking dish. -
Prep bread
Tear ciabatta into large bite-size pieces and add to baking dish. -
Prep feta
Break feta into large bite-size pieces and add to baking dish. -
Toss
Add tomatoes and half of oregano sprigs to dish and toss all to combine. Drizzle everything with ½ cup oil and season with pepper. -
Bake
Transfer dish to oven and bake until bread is golden, tomatoes have burst, and feta is softened, 20–25 minutes. Scatter remaining oregano leaves over top. Enjoy!
