This is the perfect one-pan dish to ease you into Spring.

There’s so much bright flavor from the cherry tomatoes (concentrated bursts of sweetness) and fresh oregano and mint. The shrimp, tomatoes, and feta all cook together in the oven until golden and bubbly. All you’ll need is a simple side of orzo to soak up the sauce. Cook, relax, and enjoy!

What you’ll need: 1 shallot
4 cloves garlic
¼ oz fresh oregano
¼ oz fresh mint
1 can cherry tomatoes
12 oz peeled and deveined medium shrimp
3 oz feta cheese
⅓ cup orzo
olive oil
coarse salt
freshly ground black pepper

Equipment: ovenproof skillet
small pot

Recipe steps: 1. Prep ingredients
Preheat oven to 475°F with rack set in upper third. Remove ends from shallot, cut in half then thinly slice. Peel and thinly slice garlic. Remove leaves from oregano and mint stems. Coarsely chop mint and half of the oregano.

  1. Cook aromatics
    Heat 2 tablespoons oil in an ovenproof skillet over medium. Add shallot, garlic, and the whole oregano leaves. Cook, stirring, until fragrant, about 2 minutes.

  2. Add tomatoes
    Increase heat to medium high. Add tomatoes and season with salt and pepper. Cook, stirring occasionally, until no liquid remains in skillet, 5 minutes.

  3. Add shrimp and feta
    Add shrimp, mint, and remaining oregano to skillet. Stir to combine and crumble feta over top.

  4. Bake
    Bake until liquid is bubbling, cheese is beginning to brown, and shrimp in center of dish are opaque, 15 minutes.

  5. Make orzo
    Bring a small pot of salted water to a boil. Add orzo and cook until al dente, about 8 minutes.; drain. Serve topped with shrimp mixture. Enjoy!
