Hoisin turkey burgers with green beans, ginger & garlic

Jenny Rosenstrach, our favorite weeknight dinner guru, has shared a delicious meal for Mother’s Day.

She loves Mother’s Day not so much for breakfast in bed and flowers but because it means spring is well under way and the grill is open for business. Since not everyone has a grill, we cooked these ultra-flavorful turkey burgers under the broiler, which provides direct heat just like a grill. On the side you’ll find crisp green beans seasoned with fragrant ginger. Cook, relax, and enjoy!

What you’ll need:
2 oz scallions
1 oz fresh ginger
1 clove garlic
½ oz fresh cilantro
1 lime
8 oz green beans
12 oz ground turkey
2 Tbsp hoisin sauce
¼ tsp cayenne pepper
¼ tsp Chinese five-spice powder
2 sesame seed hamburger buns
coarse salt
freshly ground black pepper
olive oil

Equipment:
2 rimmed baking sheets
large skillet

Recipe steps:

  1. Prep ingredients
    Remove roots from scallions then finely chop the rest. Peel and finely chop or grate ginger and garlic. Remove cilantro leaves from stems and finely chop leaves. Juice half of the lime and cut the other half into wedges. Remove stem ends from green beans.

  2. Mix meat
    Combine ground turkey, cilantro, 1 tablespoon hoisin sauce, lime juice, cayenne, five-spice powder, ⅓ of the scallions, half of the ginger, and season with salt and pepper.

  3. Make patties
    Preheat broiler to high with rack 6-inches from heat source. Shape turkey mixture into 2 patties, each 4-inches in diameter. Place on a rimmed baking sheet.

  4. Cook burgers
    Lay buns open flat on a rimmed baking sheet and broil until toasted, about 1 minute. Broil hamburger patties until browned, about 5 minutes. Flip patties over and brown on the other side until cooked through, about 5 minutes. Remove and let rest.

  5. Cook green beans
    Heat 1 tablespoon oil in a large skillet over medium high. Add remaining ginger and scallions and season with salt and pepper. Cook until soft, about 1 minute. Add green beans and garlic and cook, uncovered until the green beans are tender but still crisp, about 4 minutes. Season with salt and pepper.

  6. Assemble
    Serve burgers on buns topped with more hoisin sauce and lime wedges for squeezing over the top with green beans alongside. Enjoy!
