What You’ll Need:
1 small red onion
1 dry pint cherry tomatoes
2 Persian cucumber
¾ oz fresh cilantro
12 oz ground pork
1 tsp garam masala
1 lime
2 potato buns
7 oz 2% Greek yogurt
coarse salt
olive oil
freshly ground black pepper

Equipment:
grill, grill pan, or rimmed baking sheet

Recipe Steps:

  1. Prep Ingredients:
    Halve, peel, and finely chop half of the onion; thinly slice the other half. Halve tomatoes. Thinly slice half of the cucumbers and finely chop the rest. Pick cilantro leaves from stems and finely chop stems. Roughly chop cilantro leaves.

  2. Make Burgers:
    Combine ground pork, cilantro stems, finely chopped onion, garam masala, 1 teaspoon salt, ½ teaspoon sugar, and several grinds of pepper in a large bowl. Mix gently to combine and form into two 4-inch patties.

  3. Make Tomato Salad:
    Squeeze lime juice into a medium bowl. Add tomatoes, sliced cucumber, sliced onion, chopped cilantro, and 2 tablespoons oil. Season with salt and pepper and toss to combine.

  4. Grill Burgers:
    Heat a grill or grill pan over medium-high or preheat broiler. Grill burgers, flipping once, until well browned and cooked through, 6–7 minutes per side (or place under the broiler until well browned and cooked through, 3–4 minutes per side).

  5. Grill Buns:
    Split buns in half and add them face down on the grill (or face up under the broiler) and toast until golden, about 1 minute.

  6. Assemble:
    Combine yogurt, chopped cucumber, and 1 teaspoon oil in a medium bowl and stir to combine; season with salt and pepper. Serve burgers on buns, topped with some yogurt sauce, alongside tomato salad and remaining yogurt sauce. Enjoy!
