  Pollock is a deliciously meaty fish. Ours stays ultra moist under a coating of mayonnaise, shallot and fresh thyme.

The real secret ingredient in this dish is anchovy paste, which adds a certain umami to both the fillet and the sauteed broccoli rabe. Quick cooking couscous, fresh peas, and garlic oil get mixed together with the broccoli rabe, making for a super tasty and filling one-stop side dish.

What you’ll send:

1/2 cup couscous
2 (6-to 8-ounces) pieces pollock fillet
2 tablespoons mayonnaise
1 lemon
1 small shallot
1 1/2 teaspoons anchovy paste
1 large stem thyme
8 oz broccoli rabe
8 oz english peas in the shell
1 garlic clove
Olive oil
Coarse salt
Freshly ground black pepper

Equipment:

Recipe Steps:

1. Make couscous

Bring 1/2 cup salted water to a boil in a small saucepan. Add the couscous and remove from heat, let stand covered until ready to use.

  1. Prep aromatics

Wash then zest and juice 1/2 the lemon. Cut the other half of the lemon in wedges. Peel then very finely chop the shallot. Remove leaves from thyme sprigs then finely chop (1 teaspoon).

  1. Prep vegetables

Trim stem ends from broccoli rabe and discard. Cut remainder crosswise into 1-inch pieces. Shell peas (1/2 cup). Place broccoli rabe and peas in a skillet with 2 cups of water. Season with salt and cook until broccoli rabe is wilted and stems are crisp-tender, about 3 minutes. Drain well in a colander.

  1. Cook fish

Preheat broiler with rack 6 inches from heat source. Spread 1 teaspoon oil on a rimmed baking sheet. Put fish, on baking sheet and season with salt and pepper. Stir together mayonnaise, shallot, thyme, 1/2 teaspoon anchovy paste, and 2 teaspoons lemon juice and 1/2 teaspoon zest. Spread evenly over the top of the fish. Broil until just cooked through, about 5 minutes.

  1. Saute vegetables

Meanwhile, smash garlic clove and peel. Heat 2 tablespoons oil with garlic in the skillet over medium high heat, until garlic is golden, 1 to 2 minutes. Add remaining 1 teaspoon anchovy paste and saute for a few seconds then add broccoli rabe and peas, and season with salt and pepper. Sauté, stirring, until well coated with garlic oil, about 2 minutes.

  1. Finish couscous

Fluff couscous with a fork then stir into broccoli rabe and peas. Serve with fish. Enjoy!
