Deciding to cook potatoes for dinner is simple. Deciding how to cook them is not. The good news is that you can never really go wrong. Here are some delicious, easy-to-prepare potato recipes.

1. Grilled Hanger Steaks with Fingerling Potatoes, Broccoli and Garlic Butter

Joe Carroll is a master on the grill so we are thrilled to have one of the recipes from his book, Feeding The Fire, adapted for a Marley Spoon box! Everything in this meal- the hanger steaks, potatoes and broccoli- gets a turn on the grill (or grill pan!) and a healthy dose of his addictive garlic butter. Cook, relax and enjoy!

2. Lamb & Spicy Sweet Potatoes with Lime Yogurt

The combination of tender sweet potatoes and Greek yogurt is so delicious you’ll never want to eat your roasted vegetables any other way. Scallions get cooked whole with the steaks and take on the rich flavors of lamb. Remember to smear the plates with yogurt before topping with vegetables and lamb so you get some creamy and tangy goodness in every bite. Cook, relax, and enjoy!

3. Roasted Fish & Kimchi Potatoes with Arugula

Kimchi, a fermented cabbage filled with healthy probiotics, is one of our favorite superfoods. It can be quite spicy, so make sure to taste it before using in the recipe so you can decide how much you’d like to add. 4. Grilled Asparagus & Potatoes with Herb-Scallion Sauce & Goat Cheese

Doesn't get much simpler (and easier!) than grilled asparagus and potatoes, and we're answering the question "can you grill it?" with a resounding "yes!" Steaming sturdy russet potatoes beforehand means a shorter grilling time, and a super flavorful scallion chimichurri will be your new favorite condiment for just about everything. Creamy goat cheese gets warm and soft when sprinkled onto the veggies. Cook, relax, and enjoy!

5. Big Martha's Mashed Potatoes

This luscious mashed potato recipe comes from Martha's mother (affectionately called Big Martha), and incorporates cream cheese for a rich and creamy mash. Be sure to heat the butter and milk together on the stove so you're not adding cold liquid to warm potatoes. The finished product is velvety potatoes, ready to share the stage with its fellow sides and the main player—turkey!

6. Chicken & Spiced Potatoes with Onions, Kale, and Sour Cream

Warning: no pots or pans allowed! Because this quick and flavorful dinner relies only on our favorite kitchen equipment workhouse—the sheet pan! Spiced potatoes and onions roast together, co-mingling with delicious chicken pan juices to become crisp and flavorful. Lemony sour cream adds freshness.
