Grilled Salmon with Pattypan Squash, Couscous and Chimichurri
Chimichurri is an Argentinian green sauce, an herb vinaigrette of sorts. Actually, one could think of it as pesto’s South American cousin, and we all know how versatile pesto is! Meat, fish, vegetables or starches, chimichurri can handle them all. Here, it’s teamed up with goodness from the grill to create a quintessential summertime meal.
Sticky Glazed Salmon with Ginger Corn and Broccoli
Our homemade syrupy marinade comes together with little effort and gives our salmon a lovely, burnished coating. We particularly enjoyed spooning it onto the fish, and then scraping the pan’s sticky surface. We sautéed plenty of fresh ginger and garlic for a truly flavorful side of corn and broccoli. Don’t worry if your vegetables darken against the hot skillet. If anything, they’ll impart a smoky flavor that pairs nicely with the sweet glaze. Cook, relax and enjoy!
Salmon & Roasted Vegetables with Green Mayonnaise
This special recipe comes to you courtesy of Lucinda Scala Quinn’s mother, Rosemary Scala, just in time for Mother’s Day. Inspired by a restaurant meal, it’s adapted for the home cook. Vegetables roast until golden while salmon packed in foil steams on the rack beneath. We’re so addicted to the herbed green mayo that we want to drag everything—asparagus, potatoes, and salmon—through the creamy sauce. Cook, relax, and enjoy!
Coconut-Salmon Curry with Bok Choy and Yellow Pepper
You only need one pot for this curry recipe! Simply poach the salmon in coconut milk curry and add some crisp, colorful veggies to the mix. We recommend yellow pepper. And yes… it is another green curry.
Teriyaki Salmon Burgers with Pineapple & Sweet Potato Fries
Fish dinner is in burger form with a splash of Hawaiian flavor! Pineapple and coconut flakes make for a bright, light salmon burger. Use a fork and knife or just eat with you hands. Cook, relax, and enjoy!
Smoked Salmon-Corn Chowder with Spinach
Creamy corn chowder just got a whole lot better! Hot-smoked salmon, smoky chipotles, and creamy mascarpone add delicious depth to take the ordinary to the extraordinary in this comforting weeknight meal. The late additions of spinach and corn just before serving lend a subtle sweetness and vibrant finish. Cook, relax, and enjoy!
Hot Smoked Salmon Rice Pilaf with Peas and Cucumber Yogurt
This is a riff on kedgeree—a curry-flavored rice pilaf style dish that includes smoked fish. We’ve modernized it by adding a dollop of cucumber raita-style yogurt on top, and including peas and cilantro for a fresh pop of color and flavor. The hot smoked salmon is a protein-rich addition, just make sure to pick out any pin bones that might be hidden as you flake the fish. Cook, relax, and enjoy!
