Our Culinary Director, Jennifer Aaronson has been introducing us to some of our favorite new sauces for summertime meat dishes.

This one is a perfect way to take advantage of strawberry season for anyone with a sweet and savory tooth.

What you’ll need:

2 sprigs fresh thyme
4 ounces strawberries
1 shallot (1 oz)
1 small bunch fresh parsley (1 oz)
2 sprigs oregano (1.5 oz)
4 teaspoons red wine vinegar (0.75 oz)
1 teaspoon honey (0.25 oz)
4 teaspoons olive oil
Salt and pepper to taste

Recipe Steps:

  1. Prep ingredients
    Hull and finely dice strawberries. Remove ends, cut in half, peel and finely chop shallot. Remove leaves from herb stems, then finely chop parsley (¼ cup), oregano (1 tablespoon), and thyme (1 teaspoon).

  2. Mix ingredients
    In a small bowl, stir together strawberries, shallot, herbs, 4 teaspoons oil, vinegar, honey, ½ teaspoon salt and ¼ teaspoon pepper. Top off seared or grilled pork chops with the strawberry chimichurri and enjoy!
