What You’ll Need:
1 medium red onion
5 garlic cloves
1 red bell pepper
1 1/2 teaspoons ground paprika
3/4 teaspoon ground cumin
1/4 teaspoon red pepper flakes
1 14.5 ounce can diced tomatoes
2 tablespoons unsalted butter
8 parsley stems
3 whole wheat pitas, 6 inch diameter
olive oil
coarse salt
freshly ground black pepper
4 eggs

Recipe Steps:

Prepare Vegetables:
Heat broiler to high with rack 6 inches from heat source (second rack down from top). Peel and finely dice the onion, peel and chop the garlic. Halve the bell pepper, remove the core then finely dice. -
Make Spicy Tomato Base:
Heat 2 tablespoons of olive oil in an oven proof skillet (10 inches) over medium high heat. Add onion, 1/2 the chopped garlic and bell pepper, season with salt and pepper and cook until the onion is soft and mixture is fragrant, about 5 – 6 minutes. Add the paprika, cumin and red pepper flakes, stir well and cook a further minute before adding the can of tomatoes. Mix thoroughly and reduce heat to low. Season to taste with salt. -
Add Eggs:
Create 4 ‘dimples’ in your sauce, and carefully crack an egg into each space. Reduce heat to low and let eggs cook in gently bubbling sauce for 7 minutes. Transfer the skillet to the oven and cook under the broiler until egg whites are almost set all the way through, about 4 minutes (they will continue to set as it sits). Remove and set aside. Keep broiler on. -
Make Garlic Butter:
Meanwhile, remove leaves from parsley stems and chop half the leaves. Place butter, remaining 1/2 of garlic and chopped parsley in a small bowl and season generously with salt and pepper. Mash with a fork to make garlic butter. -
Make Garlic Bread:
Evenly spread pitas with garlic butter, place on a rimmed baking sheet and place under the broiler and cook until butter is melted and the bread is golden, about 1-2 minutes. -
Finish:
Cut each garlic pita into 4 wedges, then scatter the Shakshuka with remaining parsley and serve garlic bread alongside for dipping. Enjoy!
